What are the differences in the VR6 in my 1999 EuroVan and the VR6's
in Jetta's, etc.

I need to replace my engine and thought it might be easier to find an
engine from a Jetta or Passat.

Try searching here: http://www.gti-vr6.net/library/ From memory, I think the Eurovan motor makes only 140HP, but with more torque low in the band than the car...
