Here in the HUMID Midwest. I flush my brake fluid every fall on all 3
vehicles when I put the winter wheels. The color has changed by then. The
fluid starts to look dark honey tan in just 12 months. The color shift you
can see is RUST from water in the fluid. In a dry climate 2 years may be
just fine.
Don't leave out the clutch. Mine is usually very dark brown in 12 months
even though the rest of the system is still lighter colored. Make sure to
put the rubber bleeder caps back in place and use never-seize on the
bleeders.

I should add: it is recommended to do a brake fluid flush every two years.
That's not a bad thing to do on all cars. The fluid slowly accumulates
water, which will do bad things to brake components. It'll work for 10 years
w/o changing, but the first time you have to change a caliper, you find you
have to replace most of the system, if you don't change the fluid. I waited
until the 3 year mark on mine.
Air filters are rumored to be good for like 100k; I wimp out and do 40k.
It's a cheap item, I figure. I still do fuel filters every 20k, although a
coworker has like 160k on his. I suspect that, if you only buy fuel at a
high-turnover truck stop, and it's good ULSD, then you could probably go
100k on a fuel filter. Me, I figure, it's $27 a pop, although I might start
changing it every 36k instead (once/year).
