I replaced my knock sensor about 1200 miles ago on my 1999 Forester and it seems
that it solved my P0328 check engine light on issue

My problem is that when I put use my OBD to see the I/M status, it reports that
the CATALYTIC is still not ready. The rest of the applicable status are ready.
How much more do I have to wait before I can bring the car in for emission
testing?

You need a knock sensor. If you can hear knock or ping, its too late to do anything about it. The knock sensor hears it before you do and adjusts the ignition...
